Through photosynthesis, plants produce sugars that feed soil life — essential for healthy soil. The plant is the solar panel for underground life; without that cooperation, there is no flavour, aroma or vitamins in the crops.

In this webinar, Dutch regenerative farmer Erwin Westers will share what he has learnt through his experience of cover crops and their benefits within organic growing systems. A core element of Erwin’s approach is keeping the land green all year round with multiple plant species.

About Erwin Westers
Erwin Westers is a regenerative and biodynamic farmer based in Hornhuizen, Netherlands. He runs Horaholm Farm alongside his father, where they have spent over 20 years exploring how to work with nature instead of against it. Horaholm was recognised in 2025 as one of Europe’s 50 most innovative farms. In just four years, between 2016 and 2020, soil organic matter levels on their arable land increased from 2.0% to 3.4%.

Erwin’s focus is on restoring soil biology, cutting chemical inputs to near zero and producing specialised seeds for other regenerative farmers. Their work shows how farming can heal both the land and the climate – restoring soil life, inviting biodiversity back and capturing carbon – a powerful example of what’s possible.

Erwin is a co-founder of the Dutch Regenerative Alliance, which is helping scale regenerative agriculture through community support and shared education.
